Recipe & Review: Vegan Banana Ricotta Toast

Hello everyone,

Avocado toast has become… Let’s just say “a thing.” Admittedly, I love a good avocado toast as much as the next millennial, but recently I had a craving for a sweet, slightly savory breakfast toast. I had just picked up some Kite Hill Ricotta so I thought—why not make a Vegan Banana Ricotta Toast?! I’m so glad I did. It was simple, ascetically pleasing, and delicious!

I love all things banana + peanut butter flavored, but I was never one for savory/ sweet breakfast combos. This recipe has swayed me. Kite Hill’s ricotta is slightly sweet and silky and can be used to replace traditional ricotta in any recipe. I’ve previously used this ‘ricotta’ for stuffed shells, and it works fantastic! Check out my tried and true recipe sure to please the dairy-free non-believers! (Plus, you can save $1.00 on the Kite Hill product of your choice!) Next on my list is to use this as a substitute for mascarpone!

Sunday Savings: Kite Hill, Newman’s Own, Carr’s Crackers and more!

Hello everyone,

I’ve been busy preparing my vegetable seedlings for summer. I’m so excited to garden this year—albeit slightly intimidated by the seemingly never-ending steps in the process. My basement officially looks like I’m a doomsday prepper, complete with 3 hanging shop lights and over 100 plants. I’m hoping that even in my first year I’ll ‘break even’ by producing my own vegetables, but I’ll admit it’s not the cheapest hobby to start.

I took a break from separating my seedlings to round up the freshest savings for the week. There are many new rebates and coupons right now, including one for $1.00 off Kite Hill vegan cheese! If you haven’t tried Kitehill, I urge you to pick some up on your next grocery run! The cheese has a light, rich texture that doesn’t disappoint!

Additionally, I know I’m probably late in the game, but I recently started going to Aldi’s for limited canned goods and produce. This week they even had three packs of tri-color peppers for $1.89. That’s way better than other grocery stores, including Trader Joes. I’m also pleasantly surprised by the quality. They were fresh and lasted over a week!
