Recipe: Vegan German Chocolate Cake

Hello everyone,IMG_1880

I’ve known that my partner’s favorite cake is “German Chocolate Cake” for a little while now, but I never set out to make it. Perhaps I found it a bit daunting. Or I didn’t want to tarnish his favorite cake.

Well, I finally decided there is no time like the present. Like any good baker, I first did some research on the cake’s history and found a very basic recipe to veganize. It turns out the cake isn’t even from Germany! Continue reading “Recipe: Vegan German Chocolate Cake”

Recipe: Broccoli (Vegan) Cheddar Potato Skins

Hello everyone,FullSizeRender_8

How’d you spend your weekend? Eating junk food, watching the game, or at least, watching Lady Gaga and Beyonce? I actually love football, but I wasn’t terribly invested in either team. I’m a die hard Pittsburgh Steelers fan. That said, I love any excuse to yell at the TV and eat some tasty vegan comfort food.

This year my partner decided to try his hand at vegan potato skins. Veganizing your basic potato skin is pretty simple. Instead of real cheese, use your favorite non-dairy alternative, such as Daiya Cheddar Style Shreds. Instead of real sour cream, use something like Tofutti Sour Supreme Cream. It’s as easy as that! Recipe: Tofu Spring Rolls

Hello everyone,
Who doesn’t love a good appetizer? Some of my favorite appetizers come from asian restaurants – pakoras, fried tofu, summer rolls, and spring rolls! This weekend I realized that I had never actually made spring rolls, so I decided to give them a try.
I’ll be honest – I didn’t make the most attractive looking spring rolls, but they tasted great! I also found the entire process quite enjoyable. Rolling spring rolls is kind of fun!

This is the perfect quick and easy appetizer to bring along to your next potluck or social event. Please give this recipe and let me know what you think!

Cheers!

Jocelyn

Recipe: Savory Lentil Vegetable Stew

Hello everyone,FullSizeRender_3

We haven’t had much of a winter until this week, and I am not prepared. One good thing
that comes along with cold weather is hearty, savory stews! This past week I was going through my cupboards and I noticed I had a lot of red lentils begging to be used. Thus, I decided to clean out my refrigerator and make a stew.
Soups and stews are the perfect end of the week meal on a chilly night. It’s warm and inviting, plus it enables you to use up all of those vegetables wasting away in the crisper.

What follows is my own recipe for a savory lentil vegetable stew, flavored with turmeric and cardamom. It’s so delicious you and your family will all want seconds, which is just fine, since this recipe makes enough to serve 10!

Traditional Bruschetta

Hello everyone,

Today a few of my friends are hosting a game night. I offered to bring an appetizer since the hosts are graciously handling the main the course – a DIY pasta bar!

Keeping with the Italian food theme, I’ve opted to bring a quick and easy traditional Italian bruschetta with a drizzled balsamic glaze and freshly grated vegan mozzarella cheese.
