Recipe: Vegan Chocolate Ginger Sugar Cookies

Hello friends,

Today I want to share a new cookie recipe I tried this week. I wanted to make a chocolate cookie, but I don’t like overly chocolatey flavors. I’ve been using ginger a lot lately so I decided to give it a try. What follows is a recipe for a chewy, moist cookies with light chocolate and ginger flavors.

It’s my favorite time of year. I love the colors, the weather, and the food! Once there is a crisp chill in the air, I tend to make at least one dish per week that utilizes a type of squash. But hey, I’m still the first to admit that all squash varieties have their ups and downs. I don’t think anyone enjoys hacking one open, but if you point in the effort, it’s so, so worth it! Think about a warm, sweet, roasted butternut squash, or how about spaghetti squash with homemade pesto sauce? Easter Potluck Treats

Vegan Tofu Avocado Coconut Curry

Hello friends,

I suppose you’ve noticed that I’ve been purchasing a lot of avocados lately, and this week isn’t any different. They are a great source of ‘the good fat’ and pretty tasty too. I had a hankering for indian food this weekend so I decided to attempt to make a vegan curry from scratch without a recipe. I’m happy to say that it was a success!
