Simple Homemade Crusty Bread

Hello everyone,

My partner has been trying out different bread recipes for sometime now. I’m excited to say, he thinks he finally found “the one.” Cory stumbled on this Youtube video from Tasty and decided to give it a try. He ended up making a few changes, including proofing the dough twice instead of once and using a little more water. The result was an amazing—a simple homemade crusty bread with a soft center! I think the result is partially due to the new Lodge Cast Iron Double Dutch Oven 5-Qt that we picked up last month.

Side note: I did not want this dutch oven as my kitchen is quite small and it takes up some space, BUT it is so versatile and makes everything taste great—really, anything from sauteed peppers and onions to this bread recipe!

This recipe + Lodge dutch oven made the tastiest homemade bread with just the right outer shell crunch and soft, fluffy center. This bread is perfect for soups, sandwiches or even bread pudding! It’s visually pleasing with a nice golden color and the taste is perfectly yeasty! Watch the video and give our adapted version of the recipe a try!

Recipe: Vegan Chocolate Chip Carrot Cake

Hello friends,

My dad loves carrot cake. Every few years for my parents birthdays  … Yes, you read that correctly—my parents were born on the same day two years apart! Anyway, every so often, I surprise them with a homemade carrot cake. This year, I started making the cake, got half way through the recipe, and realized I didn’t have any raisons! A carrot cake without raisons! Can you believe it? Well, it was much too late to head to the store. Or at least, I didn’t want to trek to the 24 hour Giant Eagle. So I started thinking about how to make a carrot cake with a twist. I looked around the cupboard and saw some chocolate chips, pecans and ginger powder. Voila! Why not make a vegan chocolate chip carrot cake?!

I have this saying—good food + good food = good food. It works with basic ingredients as well. The cake was perfectly moist, not too dense, and just sweet enough. It did not disappoint! Both my parents loved it! Why not give this recipe a try the next time you need an ‘inspired’ dessert?

Cheers and happy eating!

Recipe: Vegan Vanilla “Birthday” Cupcakes

Hello everyone,

I recently blew out the candles for my 30th birthday. Where did the time go?! The weekend was filled with family, friends, lots of laughter, and of course, plenty of good food! When it comes to baking for my loved ones, I go all out with flavor and style. But for me, I like to keep my own birthday treats simple.

I love a perfectly done vegan vanilla cupcake. The light airy cake, topped with a sweet icing and sprinkles – it can’t be beat! There is something so comforting and special about it. I’ve been making these cupcakes for years, but I recently doubled the amount of time I let the soy milk and apple cider vinegar curdle. I have to say, it made a huge difference! I’ve never had cupcakes so fluffy!

Give this updated recipe a try and let me know how it works for you!

Cheers & happy eating!

Recipe: Homemade Pita Bread

Hello everyone!dsc_0432.jpg

Who doesn’t love bread? I know we all feel like Oprah in that commercial, “I Love Bread. I. LOVE. BREAD!”

While we enjoy the carb-filled goodness, many of us don’t love making bread. It can be time consuming. It can be frustrating. But, my partner and I have been slowly been perfecting a recipe for our favorite kind of bread—pita bread!

Is it worth making pita at home? Absolutely. Store-bought pita is often several days old and simply doesn’t taste as good as hot out of the oven bread. Warm, toasty home-baked pita is worth the effort. It puffs up perfectly for ‘pocket pita’ sandwiches and pairs great with your favorite hummus.

This pita bread recipe produces a nutty,  rich flavor along with a light, airy consistency. Once you taste it, you won’t be buying pita bread at the store again. …  Okay, at least not when you have the time to make your own.

What are you waiting for? Give it a shot!

Cheers & happy cooking!

Vegan Choco Ginger Macadamia Nut Cookies

Hello friends!

One of my all-time favorite cookies is the traditional white chocolate macadamia cookie. Unfortunately, this is a very rare cookie to find made vegan. This is probably because vegan white chocolate chips are about as hard to find as unicorns. Tonight I opened my cupboards, took a look at what I had in stock, and decided to try a new spin on the macadamia nut cookie. The end result is a gooey, moist chocolate chip ginger macadamia nut cookie.

Take a look at the recipe, give it a try, and please let me know what you think! What’s your favorite cookie that you wish could be made vegan?
