The air is crisp, the leaves are getting crunchy, but for some reason, the weather hasn’t quite turned to fall just yet.<\/p>\n

I recently needed to make an appetizer for a weekend potluck. During the fall, I love to make winter squash salad and more ‘hearty’ foods. I took this opportunity to make one last “feel good” summer flavored appetizer. I made \u00a0my indulgent vegan macaroni salad. Check out this quick and easy (under 30 minutes!) recipe below!<\/p>\n

Indulgent Vegan Macaroni Salad<\/h2>\n

Ingredients\/ Shopping List:<\/strong><\/h2>\n<\/div>\n<\/div>\n

• 1 package, elbow pasta<\/span><\/li>\n
• 1 cup red and green pepper<\/span>,\u00a0diced<\/li>\n
• \u00bd\u00a0cup celery, diced<\/li>\n
• \u00bd\u00a0cup red onion,\u00a0diced<\/li>\n
• \u00bd\u00a0cup carrot,\u00a0diced<\/li>\n
• \u00bd\u00a0cup Hampton Creek Just Mayo<\/a> (I\u00a0<\/em><\/span><\/span><\/span>used Light)<\/em><\/span><\/span><\/li>\n
• \u00bc\u00a0tbs\u00a0Hampton Creek Just Sweet Mustard\u00a0<\/span><\/span><\/span><\/li>\n
• \u00bc\u00a0cup apple cider\u00a0vinegar<\/li>\n
• 1 tsp. dijon mustard<\/li>\n
• 2 tbs\u00a0parsley<\/li>\n
• Paprika, to taste<\/li>\n
• Salt & Pepper, to taste<\/li>\n<\/ul>\n<\/div>\n

  Directions:<\/strong><\/h2>\n<\/div>\n<\/div>\n

  • Bring salted water to boil.\n
    \n
    • Cook pasta according to package.<\/li>\n
    • Strain, run under cold water to stop cooking, and set aside.<\/li>\n<\/ul>\n<\/li>\n
    • Dice the red & green peppers, carrots, celery, and red onion.\n
      \n
      • In a large bowl, mix well and set aside.<\/li>\n<\/ul>\n<\/li>\n
      • Finely chop the parsley.<\/li>\n
      • In a small bowl, combine\u00a0the Just Mayo<\/a>, Just Sweet Mustard, dijon mustard, apple cider vinegar, parsley, salt and pepper.<\/li>\n
      • Toss the macaroni and chopped veggies with the dressing.<\/li>\n
      • Top with paprika, to taste.<\/li>\n
      • Let chill for one hour.<\/li>\n
      • Enjoy!<\/li>\n<\/ul>\n
