Almost every weekend I am lucky enough to have a variation on today’s basic tofu scramble recipe. I absolutely love tofu scramble. I know – every vegan cookbook has a recipe, this is “the” go to vegan breakfast option at vegan-friendly restaurants, and everyone has tried this meal at least once. But I don’t think that means we should discount it. Additionally, this is a meal that all new vegans should quickly learn to master. It’s quick, it’s easy, and it’s satisfying. I hope you enjoy the following recipe.

Tofu Scramble

***Please feel free to share widely, just give me some credit or a link back!
Prep Time: ~15 minutes; Cook Time: ~10 minutes; Yield: Serves 4

Ingredients/ Shopping List:

  • 2 tbs avocado oil
  • 1 package extra firm tofu, drained
  • ½ ripe avocado, diced
  • ½ cup onion, minced
  • cloves garlic, minced
  • ½ jalapeño, minced
  • ½ cup red pepper, chopped
  • ½ cup green pepper, chopped
  • 4 links Field Roast breakfast sausage
  • 3 red potatoes
  • 1 pack Fantastic Tofu Scrambler or make your own by mixing 1 tbs rolled oats, 2 tsp turmeric, 1 tbs nutritional yeast and 1-2 tbs flour
  • 1/4 cup vegan cheese (I used Chedder-style Daiya shreds)
  • Optional vegan sour cream
  • Fresh ground salt and pepper to taste

Directions

  1. Bring water in a medium saucepan to a boil.
  2. Place 3 small red potatoes in the water, and boil for 3-5 minutes until easily pierced by a fork.
  3. Drain the water and set aside the potatoes to cool.
  4. Chop tofu into 1″ square cubes. Lightly ‘smash’ the tofu so it makes large ‘crumbles.’
  5. Place the tofu in a small mixing bowl and add the Tofu Scrambler mix. Combine well, and set aside.
  6. Heat avocado oil in a skillet.
  7. Cube the avocado, and set aside.
  8. Mince the garlic, onion, and jalapeño.
  9. Chop the red and green peppers, Field Roast sausages and potatoes.
  10. Sauté the red and green peppers until they turn bright but are still a little crisp.
  11. Add the Field Roast Sausages, potatoes, garlic, onion, and jalapeño.
  12. Once almost fully sautéed, add in the tofu mixture.
  13. Let the tofu heat up until one side gets slightly browned but not burnt.
  14. Flip and stir the tofu veggie mixture until evenly cooked. (Note, you may need to add more oil to prevent sticking).
  15. Garnish with vegan cheese, avocado, optional sour cream, and fresh ground salt and pepper to taste.
  16. Serve warm and enjoy!

Hello friends,

Lately, I’ve been all about tacos. Taco Tuesday everyday … tacos for lunch, tacos for dinner, and of course, breakfast tacos. I thought I’d share the basic recipe for the breakfast tacos my partner Cory whipped up for me this ‘morning.’ (Okay, maybe it was almost noon.) Hands down it was my favorite homemade breakfast taco to-date, and they are relatively simple to make!

Vegan Breakfast Tacos:

Prep Time: ~10 minutes; Cook Time: ~15 minutes; Yield: ~six tacos

Ingredients/ Shopping List:

  • ½ ripe avocado, diced
  • ½ cup onion, minced
  • cloves garlic, minced
  • ½ jalapeño, minced
  • ½ cup red pepper, chopped
  • ½ cup green pepper, chopped
  • 1 tsp. jerk seasoning
  • 4 links Field Roast breakfast sausage
  • 1 link Field Roast Mexican Chorizo sausage
  • Mexican Rice
  • Optional, black beans and/or corn.
  • Tortilla shells (I used fiber rich whole wheat shells from Whole Foods – 45 calories/ piece)

Directions

  1. Prepare the Mexican rice.
  2. Heat olive or avocado oil in a skillet.
  3. Cube the avocado, and set aside.
  4. Mince the garlic, onion, and jalapeño.
  5. Chop the red and green peppers and Field Roast sausages.
  6. Sauté the red and green peppers until they turn bright but are still a little crisp.
  7. Add the Field Roast Sausages, garlic, onion, and jalapeño, as well as, the jerk seasoning.
  8. Once almost fully sautéed, add in the black beans and corn.
  9. Heat up a tortilla. Top with a layer of Mexican rice, and the veggie and protein mixture.
  10. Garnish with vegan cheese, avocado, and sour cream. *My partner made an avocado cream sauce for our topping. This involved pureeing avocado, chile powder, garlic, vegan sour cream, and onion in a blender.
  11. Enjoy!

I was on the road traveling for work today, and after such a long day all I could handle was a quick & easy dinner. What’s easier and tastier than a veggie burger on rye bread? Nothing!

Today I tried the new Tomato Cayenne Field Roast Vegan Chao slices rather than using my usual Daiya cheese. I have to say – it was love at first bite. (ha-ha, you see what I did there?)

Now, most of us in the vegan-vegetarian community already know and love the Field Roast brand who has a handle on the faux sausage and deli meat market. They recently released “Chao,” their new vegan cheese, in three flavors: Creamy Original With Chao Tofu, Coconut Herb With Black Pepper, and Tomato Cayenne With Spicy Pepper.

So what is “Chao,” and is it really any different than the other soy or nut cheeses on the market? Well Field Roast describes “Chao” as “a rich and creamy non-dairy coconut cheese seasoned with a traditionally fermented soybean curd from Asia.” Interesting enough. Sounds unique.

I opted to melt the cheese on a Gardein black bean burger (highly recommend if you haven’t tried it), and I was very pleased with how quickly and evenly it melted. I think we all know the sense of frustration that arises when attempting to melt many brands of vegan cheese. Chao is right on par with Daiya’s melting capability, but more closely resembles a ‘real deli-style cheese.’ Look at that beautiful melty drape:

The Tomato Cayenne flavor is fabulous. It was creamy and full of flavor. The kick was strong enough to notice but mild enough for those with more ‘delicate palettes.’ It was reminiscent of a traditional harvarti-style cheese. I made sure to taste Chao melted on my veggie burger, as well as, straight out of the package. I am happy to say that it holds up no matter how you eat it! I’ve been waiting for this type of product!

The only negative thing I can say is the at over $5 a pack, this cheese is a little pricey – even for the vegan market. Hopefully, the price will come down or Field Roast will offer up some nice coupons to entice more individuals to give this product a try. Regardless, I suggest you go visit your local grocery store and try this new product for yourself. You won’t be sorry! ‘Til then, what’s your favorite non-dairy cheese?
