- 1 cup orange bell pepper, diced
- ½ cup green bell pepper, diced
- 1 cup vine on tomatoes, diced and seeded
- ½ – 1 cup corn, no salt added, drained
- 2 tbsp chives, minced
- 1+ cups prepared guacamole
- To make fresh, smash one large, ripe avocado and add
- ½ cup (or more), diced tomatoes;
- ¼ cup, diced onion;
- 1 tbsp minced jalapeno;
- 1 tsp minced jalapeno;
- 1 tbsp, chopped cilantro; and
- Pinch of salt.

- Optional: Vegan Beef Crumbles such as Beyond Meat

Instructions:
- Prepare all of the veggies, making sure to keep them separate.
- Prepare the guacamole using the above instructions.
- Prepare all optional ingredients.
- Evenly distribute the veggies among the hexagonal weigh boats.
- Place the filled weigh boats in five rows of 3, 4, 5, 4, and 3, to replicate a Settlers of Catan game board.
- Evenly distribute the veggies, attempting to separate like-colored items for an attractive display.
- Surround the Settlers nachos board with the Food Should Taste Good Blue Corn Chips.
- Dig in!
