September Savings: Kite Hill, Sabra, Frontera, & More!

Happy September Savings! Ah, while many of my friends are mourning the loss of summer, I couldn’t be happier. This is simply my favorite time of year. The leaves will soon begin to change. We’ll get sweater weather. Plus, pumpkin spice everything! I know, I know. But fall means winter. I also love snow, and I’d much rather be cold than hot. Bring it on! I’m so excited to make tofu pot pies and baked squash. Yum.

Okay, so today I have a full September Savings Round Up packed with great coupons and deals, but I also want to talk about a “new” rewards app – Fetch Rewards. This app has actually been around for quite some time, but I didn’t learn about it until last week when I logged into my Mobisave app to scan a receipt and saw their new partnership.

Use my Fetch Rewards referral code – BU7GX – and it will earn you and me 1,500 points with your first completed receipt. That’s the equivalent of $1.50.

Fetch Rewards works similar to fan favorites like IbottaBerrycart, or CheckOut51. Fetch Rewards allows you to scan a receipt within the past 14 days, and it will automatically look for certain brands/ products that earn points. Plus, there are constantly special offers which earn you up to an extra 1,000 points just for one product. That’s essentially an extra $1.00 rebate. This is a great way to put a few extra dollars back in your pocket each month while expending minimal effort. The thing I love most is the variety of brands on the app. There is everything from Lays/ Tostitos chips to Boca brand faux meats!

Want more specifics? Fetch Rewards earns you points two ways: Participating brands get base points and bonus points. All brands listed on the “save” tab earn points per dollar amount. Additionally, you can receive bonus points if the price of the item is more than the target price listed.

How does this translate to cash back/ rewards? 3,000 points will earn you $3 at Amazon or Target. You might say 1,000 points per dollar is pretty steep, but you earn points rather quickly. If you purchase a bonus brand you can get loads of extra points. I recently purchased a bag of Lays chips for a Labor Day party and received 500 “brand” points and 25 points for the $2.50 cost of the bag of chips.

If you enter my referral code (BU7GX) and scan a receipt, we’ll each get 1,500 points. That equals $1.50 in rewards just for using my code! Why turn down free money?

The only catch is you must enter the referral code before you scan your first receipt. You can do that when you first sign up for Fetch Rewards or by clicking the “Me” button and entering the code prior to scanning the receipt. Once you scan and send your receipt and it’s accepted, the 1,500 points will automatically be applied to your account.

Recipe: Thick & Chunky Garden Salsa

Hello everyone,

Over the past week, I’ve been looking for the perfect salsa recipe for canning, and I think I finally found it. I stumbled upon Tim J Turner’s Youtube channel and found a video for, “Canning and Sharing a Thick Salsa Recipe.” I adjusted the recipe a bit, and the result was amazing! It produced a slightly sweet, a tad bit spicy, thick salsa—perfect for your next potluck or date night in. I’m so excited to share this Recipe: Thick & Chunky Garden Salsa.

As you know, I planted a garden this year, and I may gone a bit overboard with tomatoes. I don’t even like tomatoes that much. Luckily, I do love pasta sauce and salsa. What better way to put all those cherry and vine tomatoes to use than to make a bunch of sauces and salsas ahead of time?

Garden Veggies

Chips and salsa is such a feel good party food. It’s perfect for game night, football season, and so many other get togethers. Now I’m ready for fall with eight cans of homemade salsa! It has just the right amount of heat, and it’s a tad bit sweet. That means it will satisfy a variety of food palates! This salsa pairs really well with veggie tacos and simple rice bowls. Impress your friends at your next get together. Bring along some homemade Thick & Chunky Garden Salsa!

Recipe: Summer Pasta with Sautéed Eggplant & Zucchini

Hello everyone,

It might still be warm out, but that doesn’t stop me from cooking my one true love—pasta! My garden has been producing such nice squash, that I’m a bit tired of sautéing it and eating it “plain.” This week, I decided to use zucchini to make a chunky pasta sauce. Plus, I harvested the most beautiful Japanese eggplants. They are thin, sweet, and have the perfect texture! I combined these magical ingredients and made the best Summer Pasta with Sautéed Eggplant & Zucchini.

This hearty pasta dish comes together in under 30 minutes, but it looks like it would take much longer! It’s quick and easy—warm and inviting. It’s simply the perfect dish for a post-work date night. What’s your favorite date night dish? Let me know!

Recipe: Vegan Elote-Style Roasted Corn Salad

Hello everyone,

My partner and I traveled to Mexico last year, and ever since, he has been on a roasted corn kick. He has been grilling corn on the cob all summer long and recently made a fabulous Vegan Elote-Style Roasted Corn Salad.

What is elote? It is a popular street food found throughout Mexico and parts of Central America. Generally, the corn is served boiled or grilled in the husk, but it is customarily eaten while skewered on a stick. The husk can serve as the “handle.” While it is known as a street food, it is also served in many upper scale Mexican dining establishments as an appetizer. Elote can be served smothered in everything from butter to cheese, even mayo! Traditionally, the corn is then topped with chile powder and a healthy squeeze of lime juice.

We opted to create a hybrid spread utilizing vegan butter, mayo, as well as, lots of lime juice and chile powder! This vegan elote-style roasted corn salad is so satisfying! The flavors work well together, and opting to create a corn ‘salad’ eliminates all the problems of getting corn stuck in your teeth. I think this is going to become a quick favorite in my household! Why not give it a try?
