]]>Are you feeling refreshed after getting an extra hour of sleep last night? Say what you want about Daylight Savings Time, but I think everyone enjoys getting an extra hour of sleep once in awhile! I’m not sure it makes up for the super early evenings though… So I’m spending this rainy, gray day planning for my week and reviewing finances. What fun! ]]>Are you busy preparing for the long holiday weekend? If you’re like me, that means three trips to the grocery store to pick up all the items you keep forgetting and hours in the kitchen obsessing over which side salad to make for your guests. Well I’ve got a helping of 4th of July Party Ideas & Recipes ready to go. And the one thing I know I don’t have to worry about is which faux meat to grill.
My hands down, favorite veggie dog is the LightLife Jumbo Smart Dog. This slightly larger dog actually fits the length of traditional hot dog buns, and it has the perfect texture + taste combo. Try it topped with a little mustard, ketchup, red onion and vegan cheese.
It’s so good and without the guilt—it’sonly 100 calories with 3.5g of fat and 4g carbs, plus it has 13g of protein! Even better, they are vegan and non-GMO. Healthy and hot dogs don’t exactly go together like pb&j, but this veggie dog seems to do the trick!
These veggie dogs are especially good if you lightly char them on the grill. And I do mean lightly. If you let them go too long, they’ll blacken and get a little “rubbery.” However, if you cook them just long enough, it makes for the perfect summer snack! If it’s a rainy day youcan also use a griddle. As you head to the store this weekend, remember to pick some of these up. Okay. So now you know which veggie dog to cook. What else? Well for me, I’ll probably whip up a creamy, vegan old-fashioned coleslaw or maybe opt for an asian-inspired slaw. Of course, I have to make my signature macaroni salad, and maybe a summer bean salad, too. Plus, you can’t forget dessert! Perhaps I’ll go with vegan Rice Krispie Treats or maybe some melty, satisfying s’mores if the weather is just right for a fire.

]]>If you’re like me the word “curry” triggers thoughts of rich, creamy coconut milk- based goodness or a nice Indian meal. If so, you’re missing out!
For years, I too, was ignorant that there is yet another type of curry that should not be missed. It’s Japanese Curry! This style of curry is thick, indulgent and delicious! Simply put — it’s a must try. The base of the dish is more of a gravy than sauce so it’s certainly a splurge meal, but it’s worth it.
The basic components include white or brown rice, the sauce, and a slew of steamed or sautéed vegetables. My partner was feeling particularly ambitious, so we added breaded eggplant to our dish. The result was an amazing meal meant to be enjoyed with friends.

]]>I know we’ve all been there. A certain is in aroma in the air, and all of a sudden, in comes the grand idea to make a hearty Mexican meal. After a few minutes of mental conversation, you decide you really want enchiladas, but you just don’t have the patience. Well, I’ve got the recipe for you!
Enchilada lasagna has all of the flavor and goodness of regular enchiladas but only 10% the hassle. I absolutely love this recipe because it’s simple. You sauté a few ingredients, you create layers, and you pop it in the oven. Simple! So simple in fact, it’s become one of my go to meals when I’m having company over. I’ve cooked this vegan meal for so many omnivores who are down right shocked that it is completely satisfying without any animal products.

1. Preheat your oven to 350 F.
2. Chop your red and green peppers and onion. Drizzle some olive oil in a pan and sauté the veggies until they turn bright but still have a little crunch. Add in the minced jalapeño and garlic. Season with a little salt and pepper. Sauté another few minutes. (The veggies should be almost cooked, but not completely).
3. Remove from heat and let cool to room temperature. Once cool, transfer to a large mixing bowl and combine with the can of black beans and corn. Toss all ingredients with the cumin, chili powder, and cayenne.
4. Get a 9×12 glass baking dish and your enchilada sauce. Spread the bottom and sides of the dish with sauce. Add a layer of tortillas completely covering the bottom of the pan. Top with half the veggie/bean filling and a third of the cheese. Add another layer of tortillas and completely cover with enchilada sauce. Repeat this process.
5. End with a final layer of tortillas smothered in the remaining cheese and sauce. Cover with tented aluminum foil (so the cheese doesn’t stick!)
6. Bake for 20 minutes. Remove the tented foil and bake ~5-10 minutes until the cheese is fully melted and the enchilada lasagna is nice and bubbly.
7. Remove from oven and let cool for at least 15 minutes so it ‘settles.’

]]>I was in the middle of a Target run and recently had a cart stopping experience. I saw Thomas PIZZA BAGELS! And they happen to be vegan. Who doesn’t have fond memories of making pizza bagels in college? But now, the bagel is already preseasoned to get the pizza party started. Start your week off right with the perfect scrumptious lunch or late night snack!
Ingredients
- 1 Thomas Pizza Bagel
- ¼ cup pizza sauce (I used Muir Glenn’s)
- ¼ cup Daiya mozzerella cheese
Directions
- Preheat the oven to 375 degrees F.
- Place the two halves of the pizza bagel on a baking sheet.
- Spread the pizza sauce evenly over the insides of the pizza bagel halves.
- Sprinkle with Daiya and whatever additional topping you like.
- Try green peppers, onion, or basil!
- Cook for 10 minutes or until the cheese is melted to your liking.
- Enjoy!
