This dish looks like such a burst of color! I know I would love to try and enjoy it some time soon! Unfortunately, my family members do not always share my passion to colorful delicious food, and prefer the brown deep-fried kind of food, but I might just be lucky with dish, and at least have a few people eating it. I love how you are using Daiya cheese in this dish – this is the type of cheese I love to eat as well as I am lactose intolerant.

In reply to Tami Qualls. Definitely give it a try! You could even add in fake meat grounds/ crumbles. I've successfully food my dad before in similar recipes!

My hubby is usually one that has to have meat in his meal. However, this one has plenty of ingredients that he enjoys, including jalapenos. I think I might be able to pull it off. I put black beans and corn in some of my recipes just to change it up, so I know I’ll enjoy this lasagna.
