Vegan Salted Sesame Cookies

Hello everyone,

What better way to spend this chilly weekend than to stay in make cookies and snuggle up with a binge-worthy Netflix show? A few years ago, a friend sent me a recipe for Salty Sesame and Dark Chocolate Chip cookies from Joy the Baker. It certainly wasn’t the easiest recipe to ‘veganize’ considering if called for quite a bit of butter and an egg, plus an extra egg yolk. However, it was worth the hassle! This recipe for Vegan Salted Sesame Cookies is now one of my all-time favorites.

These are the perfect cookies for anyone who likes things sweet and salty. The sesame seeds add a unique twist on a salty chocolate chip cookie. You can customize the flavor by adding more or less crystalized ginger chips or even chocolate chips! Plus, these cookies come out of the oven warm and chewy. Honestly, they have a consistency rarely found in homemade vegan cookies.

So here it goes, below is my highly modified version of the Salty Sesame and Dark Chocolate Chip cookies from Joy the Baker. Give them a try. Your tastebuds will thank you!

Cheers!

Jocelyn

Thanksgiving Dessert Made Easy

Hello everyone,

Who is ready for the holidays? It’s the season for good food, great company, and even more time to relax and do what you love. I’m hosting my family for Thanksgiving again this year, and I can’t wait. I simply love hosting this holiday in particular. Pumpkin is one of my favorite seasonal flavors so I’ll be making three different pumpkin-themed desserts. This is Thanksgiving dessert made easy!

If you’re looking for a simple addition to your current dessert spread, the Vegan Cardamom-spiced Pumpkin Cookies won’t disappoint! Of course, pumpkin roll is always delicious, albeit a bit anxiety inducing trying to avoid those cracks, and who can say no to “cheesecake.”

If you’re looking for an “easy out” to your Thanksgiving dessert preparations, I highly recommend picking up a tub of Eat Pastry cookie dough. You simply scoop out the 100% vegan, non-GMO dough and place golf-ball size dough balls on a baking sheet and drop it in the oven. It’s ridiculously easy and hassle free!

I picked up a tub of the Peanut Butter Chocoloate Chip last week, and it did not disappoint! The cookies were perfectly gooey and sweet—a hit at my latest game night! Why not give one of my tried and true recipes a try, or if you’re going easy on yourself, pick up some Eat Pastry cookie dough.

Cheers & happy holidays!

Traditional, but vegan, Pizzelles

Hello everyone,

FullSizeRender_5You may have guessed that my kitchen is rather small based on my photos and crafty use of angles. That means I am a strong advocate against kitchen appliances that are single use. I can justify a Vitamix Blender because I use it all the time – for soups, for chopping nuts, for baking, etc. However, I do not own a toaster because all it does is toast, and I can do that on my 2-Burner Reversible Griddle. (Side note, at first I was deeply opposed to getting a griddle, but I have to say, we use it all the time. I love it! It makes sautéing veggies a breeze, and is perfect for grilling sandwiches, too).

Well, all that didn’t stop me from finally cracking and purchasing my very own pizzelle iron, specifically the Cuisinart WM-PZ2 Pizzelle Press (which I highly recommend! It’s non-stick, works well, and is cost effective!).

I come from an Italian family so when I think about cookies that are a staple at every wedding, holiday event, graduation party, etc., I think of the pizzelle. I can still smell the anise oil cooking out of the pizzelles at my grandma’s house. Continue reading “Traditional, but vegan, Pizzelles”

Recipe: Vegan Shortbread Cookies

IMG_3520

Hello friends,

As you may have noticed from my recent posts, I am trying to burn through an overstock of chocolate chips and crystalized ginger chips. I figure you can make any basic cookie and spice it up by using whatever add-on ingredients can be found in the cupboards. Continue reading “Recipe: Vegan Shortbread Cookies”
